The Produce
Season first. Everything else follows.
Boxes arrive before the lights go on. What's best that morning decides what gets written on the board — not the other way round. Menus are short because the season is specific.

The Fire
Heat changes everything.
A single hearth runs the pass. Hardwood, embers, and a grill that is raised and lowered by hand. Smoke is treated as a seasoning — measured, never dominant.

The Room
Designed for long evenings.
Forty-two seats, low light, soft surfaces. Tables spaced so a conversation stays at its own table. Nothing about the room asks you to leave.

The Cellar
Old world. New world. Everything between.
A working list rather than a trophy cabinet — bottles chosen because they sit well beside smoke, salt and acidity. Ask, and someone will pour you something you haven't had.
Philosophy
From the kitchen.
We cook simply, which is harder than it sounds. Three or four elements on a plate, each one worth being there. If a dish needs a paragraph to explain, it isn't finished.
Technique is in service of produce, not the other way around. Fire, salt, acid, time — the oldest tools we have, used carefully.
Nothing gets held over. What doesn't get used tonight becomes stock, vinegar or a ferment for a menu three months from now.
